The subtitle of this recipe might be “Pita and Pomegranate Salad.” The salad is particularly delicious when pomegranates are in season and their burst-in-your-mouth, tart arils (seeds) add so much to the salad. I, however, make it all year-round and substitute either dried tart cherries or dried cranberries for the pomegranate arils, and add ½ teaspoon of pomegranate molasses to dress it. This is just the kind of salad you’d find at an Israeli breakfast. Like much of the food in the Israeli kitchen, this salad has the Palestinian kitchen as its origins. Early Jewish settlers adopted this practice for the same reasons as the Palestinians did originally—they were poor, and fresh vegetables were readily available and cheap.
